Silent Sundy, mostly silent, with milk and cookies

 HO!HO!HO!  
 There is nothing like Christmas cookies and milk.  Each year i make one old favorite and a couple of new ones that might become favorites. I make half  therecipie often so I don't have too many leftovers.
 
Cream Cheese Christmas Cookies Recipe
It's the most wonderful time of the year, which means it's the most wonderful time of the year for Christmas cookies! And, these festive treats are sure to be a hit at your next holiday party. If your family has an annual Christmas cookie contest, these cream cheese delights are likely to take home the winning prize. Packed with oodles of delicious favor and  adorable red and green sprinkle boarder, what's not to love? Complete with butter, cream cheese, vanilla, and sugar, these holiday cookies are a must-have. You won't be able to resist sneaking even 3 or 4 extra cookies after the kids go to bed. Speaking of the youngsters, this is a great recipe to get them involved. It's very easy to master, so the entire family can join in on the fun. However, no Southern treat would be complete without a pecan, and these decadent cookies have plenty.   • Cream together the butter and cream cheese. Add sugar and vanilla; beat until light and fluffy.

  • Combine the flour and salt; gradually add to creamed mixture, beating until well blended. Stir in chopped pecans. Cover bowl with plastic wrap and refrigerate for 15 minutes.

  • On four sheets of parchment paper, shape dough into four 6 inch rolls, 1 1/2 inches in diameter. Wrap each roll tightly in foil and refrigerate over night.

  • Preheat oven to 325 degrees F (165 degrees C). Line cookie sheets with foil. Remove rolls of dough from refrigerator one at a time. Coat each roll with red or green sugar crystals; cut dough into 1/4 inch slices.

  • Place on prepared cookie sheets; top each cookie with a pecan half. Bake for 15 to 18 minutes or until bottom of cookie is lightly browned when lifted.

 

Powdered Sugar Snowmen Cookies

Ingredients

1 cup sugar

3/4 cup Land O Lakes® Butter, softened

1 large Land O Lakes® Egg

2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

Decorations

1/2 cup powdered sugar

Decorator black sugar pearls

Decorator orange jimmies

20 small gumdrops

Fruit snack roll, if desired

How to make

  1. STEP 1

    Heat oven to 375ºF.

  2. STEP 2

    Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg; continue beating until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed.

  3. STEP 3

    Shape dough into 30 cookies: (10) 1 1/4-inch balls (about 2 tablespoons), (10) 1-inch balls (about 1 tablespoon), and (10) 3/4-inch balls (about 1 teaspoon). Place same size balls, 2 inches apart, onto ungreased cookie sheets.

  4. STEP 4

    Bake 1 1/4-inch balls 9-11 minutes, 1-inch balls 8-9 minutes and 3/4-inch balls 5-7 minutes or until edges are lightly browned. Cool 1 minute on cookie sheet; remove to cooling rack. Cool 10 minutes.

  5. STEP 5

    Sprinkle lightly with powdered sugar. Press black sugar pearls into larger cookies (base and body) for buttons and into smallest cookie to create face. Use toothpick to create hole for nose. Press orange jimmies into face for nose.

  6. STEP 6

    Stack cookies, larger to smaller, to make snowmen.

  7. STEP 7

    For each hat, cut 1​ gumdrop in half, flatten bottom half into 3/4-inch disk (discard top half). Cut base off another gumdrop; attach, sticky-side down, to disk. Place on top of snowmen. Repeat with remaining gumdrops. Use fruit roll to create scarf, if desired.



Soft Christmas Cookies
Soft cut out sugar cookie that I have used for years. I sprinkle with colored sugar before baking or you could also try icing them when cool.

  • Sift flour, baking powder, and salt together, set aside. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually blend in the sifted ingredients until fully absorbed. Cover dough, and chill for 2 hours.

  • Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a clean floured surface, roll out small portions of chilled dough to 1/4 inch thickness. Cut out shapes using cookie cutters.

  • Bake 6 to 8 minutes in the preheated oven, or until edges are barely brown. Remove from cookie sheets to cool on wire racks.

  • Preheat the oven to 350 degrees . In a double boiler, melt the chocolate.

  • Using an electric mixer, beat the butter and granulated sugar at high speed until fluffy, about 5 minutes. Mix in the egg, vanilla and salt at medium speed. Mix in the flour, in 2 additions, at low speed, scraping down the bowl after each addition. Transfer two-thirds of the dough to a bowl.

  • With the mixer on, mix the mint extract and food coloring into the remaining dough.

  • Transfer the mint dough to a 2-inch cookie press fitted with a tree-shaped disk. Press out onto a cookie sheet, using 1 click of the press; refrigerate. Wipe out the mixer bowl and cookie press.

  • Using the mixer, mix the melted chocolate into the reserved dough at low speed until almost incorporated. Add the cocoa and mix at low speed until blended. Transfer the chocolate dough to the cookie press fitted with a ribbon disk and press onto 2 baking sheets, using 2 clicks of the press, to form ovals. 6. Using a small spatula, transfer the chilled tree shapes onto the chocolate ovals. Top with the colored sugar and candies and bake until set, 12 to 15 minutes. Let cool for 5 minutes, then transfer the cookies to racks to cool completely.
