Recipie for Cowboy Bacon by John Mitzewich

 The very moment i saw this recipe, yes! knew i had to share it because it just sounded so tasty.  My apologies to Chef John, but it also made me think of "Wagon Trains" Mr Wooster.

Cowboy Bacon

This cowboy bacon is a spicy candied meat treat with a texture somewhere between crispy and chewy. Fully caramelized with a brown sugar-barbecue sauce glaze, this will be the most talked-about snack at your party.

Ingredients

Original recipe (1X) yields 8 servings

Bacon

  • 1 pound thick cut bacon

  • 6 jalapeno and/or Fresno chile peppers, cut into 48 slices, or more peppers as needed

Glaze

  • 1/4 cup firmly packed light brown sugar

  • 2 tablespoons barbecue sauce

  • 2 tablespoons rice vinegar

  • 1/2 teaspoon freshly ground black pepper

  • 1/4 teaspoon garlic powder

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Cover a sheet pan with foil and place a baking rack on top. Place bacon strips on the rack, evenly spaced.

  2. Bake in the preheated oven for 10 minutes. Turn bacon over and bake for 10 minutes more. 

  3. Meanwhile, for glaze, stir brown sugar, barbecue sauce, rice vinegar, black pepper, and garlic powder together in a small bowl.

  4. Remove bacon from the oven, brush with glaze, and bake 7 minutes more.

  5. Remove from the oven, turn bacon over, brush with glaze, and bake 7 minutes more. Remove from the oven, turn bacon over, and bake 10 minutes more.

  6. Remove from the oven and flip bacon over.

    Chef's Note

    If bacon near edge of the pan is cooking faster, those strips can be switched with strips on the inside. Also, if bacon is curling on the ends, use scissors to snip the edge so that it lays flat.

  7. Brush bacon with glaze, and bake for 10 minutes more. Remove and brush with glaze. Place pepper rings evenly on top of bacon strips; bake for 10 minutes more. Remove and brush with remaining glaze.

  8. Place back in the oven and cook until bacon is fully rendered and browned, and pepper rings are tender, about 7 minutes more.

    chef's notes

    Bacon should be almost fully candied before the peppers are placed on. The times given here are just a guide, and your bacon may cook faster or slower depending on the thickness or shape.

  9. Transfer bacon to a piece of parchment paper and let cool completely before serving. Strips can be cut in half crosswise to serve.

Charlie B. Wooster, portrayed by Benjamin Franklin McGrath (February 2, 1903 – May 13, 1967).   

Mr Wooster was pretty much my favorite character,  he was always up to something, and always there to lend a hand to anyone.  I admired his slapdash cooking methods, and his energy.
This version, there are other versions of Cowboy Bacon, just had Mr, Wooster's stamp of approval on it.
