May be its not a cookie, but you can spread it on a store bought or homemade cracker, even on some of that homemade quick bread that didn't quite turn out right. Just a thought.

I've noticed that a lot of recipes have called for Velveeta. Here is my homemade Velveeta Cheese (uses real cheese).
I
have made this more than a dozen times and it never disappoints. Very
simple to make. I use only the finest of cheese (Tillamook), which
probably makes a big difference. Just make sure that you warm slowly and
on the stove. Microwaving will make stringy cheese. Do not use
pre-shredded cheese.
*In answer to a lot of people. I have never learned to can, so I don't know if this would work*
A lot of people have asked if you can freeze this. I don't. I use it up within 3 weeks. There are so many dishes to use it in.

HOMEMADE VELVEETA (REAL CHEESE)

INGREDIENTS
1 cup water
1 packet (1/4-ounce) unflavored gelatin
1/3 cup dry milk powder
1/4 teaspoon kosher salt
4 cups grated mild cheddar cheese or a combination of cheddar and Colby

A SMALL LOAF PAN WITH PLASTIC WRAP, LEAVING A FEW INCHES OF EXCESS ON
BOTH SIDES OF THE PAN. ALTERNATIVELY, YOU MAY USE SMALLER LOAF-SIZE
CONTAINERS.
Put the water in a saucepan and bring to a boil.
Combine the gelatin, milk powder, and salt in a blender and pulse to blend.
Add the boiling water to the blender and immediately pulse a few times.
Quickly add the cheddar cheese and process until smooth.
Working
quickly, pour or spoon the mixture into the lined pan. Use a spatula to
even the top. Cover with the excess plastic wrap and refrigerate for
several hours or overnight.
Slice the cheese and use it for cheese and cracker snacks, sandwiches, grilled cheese, or add some to a cheese sauce or dip.

- 1 cup whole grain flour, plus 1/4 – 1/2 cup flour for flouring surface
- 1/3 cup + 2–4 Tbsp water!
- 1/4 tsp salt
- sea salt for topping (optional)
- Herbs (optional)
Instructions
- Using your hands, combine flour and 1/3 cup of water in a medium bowl. If adding herbs, add 1 tsp per batch. Mix well until all the flour is wet. The dough needs to be stiff, but add additional water 1 Tbsp at a time if the dough is too stiff.
- Divide the dough in half.
- Using a rolling pin, roll half of the dough out onto a lightly floured silpat mat. Roll the dough to each edge and corner of the mat, rotating, flipping, and using flour as needed to prevent sticking. Roll the dough as thin as possible for a crunchy cracker, or leave it slightly thicker for a chewier cracker. Repeat with other half of dough.
- Score the dough into desired size using a pizza cutter or a knife. Prick holes onto each cracker using a fork.
- Bake in a preheated oven at 350 F for 10-15 minutes (10 min. For thin crackers, and 15 for thicker crackers), or until the crackers are medium brown and begin to pull up at the edges.
- Remove from the oven. Eat immediately, or the next day. Store in a sealed container.
Notes
- I make this recipe with freshly ground flour. You may need to adjust your measurements on flour and water.
- But, only go up or down by a teaspoon at a time. Use just enough water so the flour is wet but the dough is stiff.
