- 1 quart
whole or 2% milk (4 cups)
it is possible to use Almond milk ad/or Oat milk for this recipe
- 4 ounces
unsweetened chocolate, well chopped ( roughly 1 cup we like a bit more)
- 1/2 cup
semi-sweet chocolate chips or well chopped semi-sweet chocolate (about 3 1/2 ounces)
- 1/4 cup
packed light brown sugar iif you don't have the light brown you can use the dark, it does effect the taste a bit, as does using raw sugar
- 1 dash of salt to bring out the flavor
1/2 teaspoon real vanilla
Marshmallows and/or whipped cream, for serving are optional
Heat 1 quart whole milk in a heavy saucepan over medium heat just until simmering. Whisk in 4 ounces chopped unsweetened chocolate, 1/2 cup semi-sweet chocolate chips, 1/4 cup packed light brown sugar, and 1 dash salt cook gentally stirimg often until chocolate is melted and the hot chocolate comes to a simmer (do not let it boil). Reduce the heat to low and simmer for 5 minutes.
{no one will notice if the cook chops a little extra chocolate for their personal consumption}
Turn off the heat. Whisk in 1/2 teaspoon real vanilla extract. Pour into mugs and serve with marshmallows and whipped cream if desired.
{ One could consider vigorous whisking as exercise, I do. also a good and constructive way to reduce stress levels.}
