Chocolate-Covered Strawberry Turkeys

We’ve all seen chocolate-covered strawberries, but what about chocolate-covered strawberry turkeys? Elevate your Thanksgiving table with this festive spin on a classic treat.

Whenever I’m putting together a Thanksgiving dessert table, I always make sure to have a nice variety. Of course, there are Thanksgiving pies for the purists, but there are also a few fall desserts to add options and confections for those who just want a small bite of something sweet. So, when we saw these chocolate-covered strawberry turkeys on TikTok, I knew they’d be perfect for the latter. They’re an adorable, few-bite confection for every Thanksgiving dessert table.

These turkey strawberries are made from pretzels, marshmallows, strawberries and milk chocolate. They’re mostly sweet, a little salty and completely festive for the occasion. Arrange them in cupcake liners and serve them among the other desserts. Fair warning: They may outshine the pumpkin pie.

Ingredients for Chocolate-Covered Strawberry Turkeys

  • Pretzel sticks: Look for the mini, thin pretzel sticks here, and avoid buying the thick pretzel rods.
  • Mini marshmallows: The mini marshmallows create the look of the turkey’s thighs. If you can’t find mini marshmallows, cut up a big marshmallow into mini-sized pieces.
  • Milk chocolate chips: Milk chocolate creates the lightest turkey brown hue. You can use dark chocolate, but it won’t resemble a golden brown turkey as much.
  • Coconut oil: Coconut oil adds shine to the melted chocolate. You can also use vegetable or canola oil here if desired.
  • Strawberries: Clean the strawberries thoroughly, hull them and dry them very well. I would dry them a few times over to prevent water from mingling with the chocolate.
  • White baking chips: Once the turkeys are assembled, we’ll dip the “legs” in white chocolate to create the leg bones. It’s the perfect finishing touch!

Directions

Step 1: Make the turkey legs

Snap the pretzel sticks in half, then slide a marshmallow onto the top of the pretzel to form a thigh. The marshmallows are already sticky, so they adhere easily to the pretzel. Repeat this process until you have 24 legs.

Editor’s Tip: If you’re having trouble getting the marshmallow on the pretzel, try making a hole in the marshmallow with one of the wooden skewers first.

Step 2: Melt the milk chocolate

Combine the milk chocolate chips and 1 teaspoon of coconut oil in a microwave-safe bowl. Microwave the mixture in short 10-second increments on medium power until melted, stirring in between so all the chips melt evenly.

Editor’s Tip: Chocolate can burn easily in the microwave if you’re not careful. You can also melt chocolate using the double-boiler method.

Step 3: Adhere the legs to the strawberries

Dip half of a marshmallow in the chocolate, then stick it to one side of a strawberry. Repeat the same process on the other side with another pretzel and marshmallow. Hold the legs onto the strawberries for a few seconds until the legs stay in place on their own, then transfer them to a waxed paper-lined sheet tray to set completely. Repeat with all pretzels, marshmallows and strawberries.

Test Kitchen Tip: This step works best on a cold strawberry straight from the fridge; the colder the strawberry, the faster the chocolate will set.

Step 4: Dip the strawberries in the chocolate

Stick a wooden dowel or toothpick into the top of each assembled strawberry, then dip it entirely in chocolate, turning it a few times to ensure it’s completely coated. Let the excess drip off, then return it to the waxed paper to harden.

Step 5: Dip the feet in white chocolate

Combine the white chocolate chips and remaining coconut oil, and melt the mixture in the microwave until smooth. Once the dipped strawberries are hard to the touch, dip the ends of both turkey legs in the white chocolate and let them set.

Carefully remove the wooden skewers. Serve the turkeys immediately or refrigerate them in a single layer in an airtight container.

How to Store Chocolate-Covered Strawberry Turkeys

Store chocolate-covered strawberry turkeys in the fridge to prevent the chocolate from melting. You can either serve them cold straight from the fridge or take them out 20 minutes before eating so they’ll soften up slightly.

Can you make turkey chocolate-covered strawberries ahead of time?

These turkey strawberries are best enjoyed the same day they’re made, but if you want to get ahead on Thanksgiving prep, make them the day before and store them in an airtight container in the fridge.

How do you get a smooth finish on the chocolate for turkey strawberries?

Oil gives melted chocolate that silky texture and shine without the hassle of tempering.

How can you prevent the melted chocolate from seizing?

To prevent the chocolate from seizing, make sure there is no water in the bowl or on any of your tools. Water will immediately make the chocolate seize, so even a drop of water in the bowl will ruin the whole bowl of chocolate. Wipe everything very well with a paper towel so the tools are completely dry.

Can you use frozen strawberries for chocolate-covered strawberry turkeys?

No, we don’t recommend using frozen strawberries for the turkey chocolate-covered strawberries. Frozen strawberries hold on to a lot of water, and water is the enemy of chocolate. Even if you completely thaw and dry the strawberries, they’re still a bit soggy. Stick with fresh strawberries for this recipe.

  • 12 pretzel sticks
  • 24 miniature marshmallows
  • 1-1/2 cups milk chocolate chips
  • 2 teaspoons coconut oil, divided
  • 12 fresh strawberries, hulled
  • 12 wooden skewers
  • 1/4 cup white baking chips

  1. Break each pretzel stick into two pieces. Slide a marshmallow onto each broken end, creating the legs; repeat with remaining pretzels and marshmallows.
  2. In a medium microwave-safe bowl, combine milk chocolate chips and 1 teaspoon coconut oil. Microwave on medium power until melted, stirring occasionally.
  3. Dip half of each marshmallow (the long side) in chocolate; attach to strawberry's middle. Place a second chocolate dipped pretzel stick on the other side of the strawberry. Place onto wax paper-lined trays. Let chocolate set until hardened; repeat with remaining ingredients.
  4. Place a wooden skewer into each strawberry. Dip entirely in chocolate, turning to coat. Let excess drip off; return to waxed paper to harden.
  5. In a small bowl, combine white chocolate chips and remaining 1 teaspoon coconut oil; melt in microwave until smooth. Dip ends of legs into white chocolate. Let set.
  6. Carefully remove wooden skewers. Serve immediately, or refrigerate in a single layer in a airtight container.
